From the Kitchen of: NY Times
Ingredients:
1 pie crust
4 strips bacon [opt.]
1 onion thinly sliced
1 cup of Gruyere or Swiss cheese cubed [small cubes]
1/4 cup grated parmesan cheese
4 eggs lightly beaten
2 cups cream or 1 cup cream and 1 cup milk
1/4 tsp nutmeg
1/2 tsp salt
1/4 tsp white or black pepper
2 potatoes small cubes
Directions:
Preheat oven to 450 degrees. Line 9 inch pie plate with pastry and bake for 5 minutes. Cook bacon and remove. Cook onion. Crumble bacon over pie shell. Add onion, cheeses and potatoes. Combine eggs, liquid, and seasonings and pour into pie shell. Bake 15 minutes at 450 and then reduce to 350 until knife inserted comes out clean about 10 minutes. Can substitute ham or mushrooms for bacon.

Ummm...
Quiche does not have potatoes in it... The real Quiche anyway ;)
